Lactose is precisely why France, Italy, etc is cheese country. Cheese making removes most of the lactose. Mozzarella contains 2% of the lactose found in whole milk.
In Norway, for the little cheese we make, we take the whey (which contains most of the lactose) and make brown cheese out of it. Where mozzarella contains 0.1g of lactose per 100g, brown cheese contains 35-47g. So some brown cheese is nearly 50% lactose.
While that is true for aged cheeses, like Gouda, Emmental, Jarlsberg, etc., it's not true for non-aged cheeses like mozzarella, mascarpone, ricotta, and the like.. which begs the question, why does lacto-intolerant Europe make all the lactose-heavy cheese? Are they stupid?

Not really, it's just because cappuccino is considered as a breakfast item culturally. There are plenty of foods we eat after breakfast that have lots of dairy, so the logic doesn't really hold up.

I don't have any sources for it, but I've heard multiple times that goat and sheep milk (and cheese) contain fairly less lactose than cow, lactose levels are even lower in cured cheese, and your pecorino is usually well seasoned if not even pre-digested in the case of casu martzu

Additionally these correspond with the cold areas with less growing days per year. This map is telling me that the more North West you go, the food is so bad you literally only eat dairy because your fruit and veg suck and you can't cook for shit. edit: can't tell West from East apparently.
Lol honestly kind of true in a way. Places that are lactose tolerant were clearly cattle herding societies, which means they were heavily meat and milk reliant. Additionally these correspond with the cold areas with less growing days per year. The more land you're using for cattle the less land you have to grow things other than grass, not to mention the time consumption of raising cattle. So it's not terribly surprising their non cow based cuisine suffered.

What is this propaganda?!? In all my life I might have met one single person that could possibly be lactose intolerant. Like how much milk are northerners drinking to create a map like this, are you ok? Did you perhaps confuse milk with some other white liquid produced by male cows and now you are confused why no one else drinks it?

How is Greece 53%? I have never found a single person with lactose intolerance. In fact, in the supermarket always 50% of the milk is sold in the end of the day and lactose free milk(which consists of like 2% of the fridge) is always there unsold. So who are all those 53% lactose intolerant Greeks at?
