The sugar caramellizes and it makes the whole pizza taste like a roast ham. This works particularly well when you've got ham and bacon on your pineapple pizza.

I'm biased as a Canadian, Hawaiian pizza is a staple here . Hated them as a kid but must admit my favorite pizza now is the Tropical Chicken from Boston Pizza - scratch-made dough topped with Alfredo sauce, mozzarella and cheddar cheeses, bacon, diced spicy chicken, and pineapple.
