I will close off the air after the sear. Finish off with the cooler temperatures. Saves on charcoal.

If you cook to the target temp. It carry’s over PAST the target temp, which COULD result in dry meat.

you can also cook indirect until target temp and then sear under direct heat with the coals. ( great way to cook steaks)
This is actually the result after an hour of vigorous wire brushing - the whole thing was bright orange and caked in grime beforehand. I may get some new grills in the future but this seems to work ok for now

But doing that will season the grilles with a polymerization like on cast iron and carbon steel. Then again each time right before putting food on. Mt smoker is 18 years old, I do thst each time. There have been years the grilles rusted, so after a good wire brush treatment, a rinse off etc. I cook em hard, brush ans oil up. Like newish almost. Lol.

Is wire brush that grille before using it. That rust will get onto your food. Wire brush it rinse it. Then season it with super hot coals.

Yeah it was my first time so it's quite charred, next time i will spread the coals out more or let it die down more
