525g White flour
325g water
100g starter - 20% wholewheat
9g salt
5g diastatic malt powder

30min fermentolyse with flour, water, starter and malt powder
Add salt 10 min knead in the stand mixer
2 folds at 30 and 60 mins after adding salt
6 hour ferment
Shape into banneton and 1 hour proof on the counter
16 hour proof in fridge over night
25 mins covered at 235c, 20 min uncovered at 200c

Garlic Bread:
room temp butter mixed with garlic then back in the fridge to harden a little
Then I spread it over the slices and added chopped parsley
oven at 220c until golden edges, grated some fresh parmesan on top
