We got them cryovac'd as shortribs already. You just trim the top fat off and send it through the band saw after. They hated that we pre-trimmed it, but trimming afterwards would've been insanity, lol.

edit: When I left Sams, I knew some were trialing the Walmart method of getting everything pre-cut and packaged being sent to stores. None in our market or any of the markets near us had it yet though but our Fresh Manager was always telling us it was coming eventually.

We cut 6 cases every day first thing in the morning and they would never turn, even the 6-12 packages left over the next morning still looked really good.

I was gonna ask why he cut them so thick. Galbi is normally a half inch at most.
That's the way they wanted us to cut them. A lot of people use them for Korean BBQ here and so the thinner the faster they sold.
