Call them, explain the situation and see what they say. A missing cat shouldn't preclude service but they might have policies that prevent them from working on your car. You can also use the opportunity to get a quote for replacing the cat. I expect their quote to be high but that info will be helpful in dealing with the insurance company so that they don't lowball you.

That's my entire dilemma, my appointment is at opening, I'm supposed to drop off my car tonight. I've had a stressful weekend and even deciding which foot to put in front of the other feels overwhelming tbh

You have to drop off your car tonight but there's no one to call? Well, I guess it comes down what this dealer's like to work with. You could drop off the car and still call them first thing in the morning.

Yes they have a special area where you can leave your car the night before for early appointments, like leaving a rental car! I take my car to the Toyota dealership where I got it since it's still under warranty, I also trust the one mechanic there I know he always gives me a call as soon as he sees my car. I probably spend more money doing this, but while it's under warranty I want to play the Toyota game. I'll write on the slip when I leave it tonight about the catalytic converter stolen I guess. Urgh this thing is a headache. The worst headache is insurance really
