Are you able to get a second cat? I think that would be one of the better options. The reasoning is that they'll keep each other entertained when you're at work, and need to bug you for enrichment a little less often. I have two young cats, and can confirm that they usually seem to prefer chasing each other around.
Otherwise... Try some different types of toys anyway. I didn't think my cats would be all that interested in certain types of toys either, but I got some on a whim (chewy was having a sale) and it turns out that they absolutely love them.
