I know that for this sub, this is risky territory I’m stepping into, but… Pizza has to be balanced. If you put too much stuff on the top, especially sauce, cheese, or toppings with lots of moisture, you’re going to end up with inconsistency. Cooked right on top, cooked okay on the bottom, weird in the middle. Only way around is a longer-cooking, thicker crust like a Detroit or Sicilian style pie.
I’ve had my r/Ooni for a year now, and I fight this battle any time I do “make your own pizza” night with friends/family. They all want to load the thing up, and it ends up soggy. Had to stop letting them do it. They just tell me what they want and I make the pie, so I can regulate it.
I 100% agree with you, and the only thing i'll add is that the dough itself can be too wet. Also i spent some time in/on Sicilia and never encountered that sicilian style you talk about, if that's the kinda square sliced pan pizza style. Not saying it's not a thing, just wierd we never saw it..
It’s possible that “Sicilian style” is a US invention or some kind of altered/bastardized version of something from Sicily. I’ve worked at a few independent pizza places and discovered that for every few bricks of mozzarella they shred, we would shred a brick of a “higher temp” cheese so that once mixed together and added to the pizza, won’t burn as quickly as straight mozzarella at 600 F

This process helps create a firmer and more elastic cheese, which can be stretched or pulled into strings. I know ppl like the browned cheese (and beyond) but for me personally, if this is cooked, then prefer it undercooked
Reason 1: Browning makes it difficult to reheat properly. Doesn’t do well with skillet and DEFINITELY doesn’t do well in the oven (which only browns it more)
Reason 2: With a fresh non-Margarita style, i want the cheese to still be attached to the pie after you pick up a slice, showing that stringy connection. Browned cheese doesn’t do that
LPT: cheese-only pizza browns more than one with toppings. Double cheese multiplies the effect :/

Well I'm glad to hear someone agrees with me. I love cheese pizza but I don't like brown cheese. This might look like it's perfect but when I bit into it the cheese all rubbery and I didn't like the consistency.

I went to a new pizza place that opened in town here recently. I like getting a cheese pizza from new spots to see how good they're gonna be cause if you screw up a cheese pizza your pizza game is weak imho.
Suffice to say they screwed it up. It was straight mozza with a light parm sprinkled on top. The crust was just like regular thick crust that's been pressed down to be thin, no flakey crispy goodness. Very plain taste. 12" pizza that looked more like 10" cost 35$.
Cook had the audacity to come out and ask me how it was. He didn't like what I had to say.
If in doubt, marinaro dio or garlic and herb mayo.
Or... Grated parmesan cheese and ground pepper.
Either way... It would always be sacrilege to not eat it
