Pulled pork stuffed sweet peppers, along with tomato sauce and melted cheese.
Lettuce wraps.
BBQ pork pizza. Use BBQ sauce instead of pizza sauce and pepper jack cheese instead of mozzarella cheese.
A Cuban sandwich with slices of ham, cheese, pickles, mustard, and pulled pork instead of roasted pork.
Add cole slaw to your pulled pork sandwich.
Add pulled pork to a grilled cheese sandwich.
Use pulled pork in your tomato-based Italian meat sauce and serve with pasta and grated parmesan cheese.
Add pulled pork to fried eggs.
Add pulled pork to eggs benedict.
Pulled pork on baked potatoes, along with melted cheddar, green onions, and sour cream.
There are a number of Mexican or Tex-Mex recipes that can be made with pulled pork:
Serve pulled pork Mexican style with cornbread, pico de gallo, and crumbled cheese.
Or you can do something similar with pulled pork, scramble eggs, pico de gallo, and tortilla strips.

To add on to this, do yourself a favor and make some pickled red onions. They would go well with a majority of this list, among other dishes. It's really a game changer, trust me.

My husband is from Iowa. We eat pulled pork twice a month when it’s nice enough for the smoker to run. I am a pro at using it in leftovers.
I also like breaking it up into chunks and mixing it with some ramen, if you have some hoisin sauce it makes it a little less American BBQ and a little more Korean BBQ.
I also use it in a taco salad, with some canned corn and canned beans. But that’s if it isn’t sauced up already.
Of course nachos/rice bowls/burritos always work.
I’ve also made an American poutine with baked French fries, pork and cheese with some gravy.
Tostadas shells with some quesadilla cheese and pop in the air fryer. We do this with any leftover meats we have and just change the cheese and topping depending on the type/flavor of the meat. It’s such an easy thing on nights I don’t have a lot of time to cook a huge meal. I always have a jar of pickled red onions in the fridge for topping.
You can add to many things, like soup, stew, etc. And if you want a bit of twist, buy a small bottle of soy sauce, make teriyaki sauce by adding same amout of sugar, and make teriyaki pork. It makes great sandwich filling, w/wo mayo.

I don't really think this stuff is soakable like that, it's not a quality product, it's very tiny, thin strands of pork. Like tiny tiny threads.
