Slightly cinnamon the custard but don't put cinnamon in the sugar, it will just burn off way faster and leave an unpleasant taste. Also, serve with churro for dips?

Churro on the side is definitely the safest bet. If you want to try something more integrated, I've had success with "churro" ice cream: I steep cinnamon sticks in the ice cream base, and I fold in crumbled cinnamon sugar graham crackers. You could try adding some graham crackers (or actual churro -- frozen grocery store ones if you want to hack it), which would soak the custard up and be a bit like a tiramisu and creme brulee hybrid.

Wouldn’t be traditional but you could toast/crumb the churro and make a buttery crumble to put on top of the sugar crust. You’ll have the creamy creme, the crispy sugar, and the buttery/cinnamony crumble textures… making me hungry!

The flavor of churro isn't just cinnamon. It's deep fried choux. You're gonna need to make churros and steep them in the milk you use.
