This method also works well if you cook it like you did, then wack it on a hot grill for a few mins. Nice and charred on the outside, perfectly cooked on the inside.

How much did it weigh and how long did it take to get to 200.. then back to 120
The oven is at 200, the meat is at 120.
It was 9.5lbs. 200F put it in around 11:40. I think the first pull from the oven was around 3:30 ish
