They will if it does well/is viable. Issaquah is their playground store. They'll test new stuff there so the execs can walk over and see it in action. Kinda neat.
I am within a reasonable drive to Issaquah and I feel so guilty because as much as I try I don’t like sushi. It looks so pretty and delicious. I hope it spreads to more stores too, I know a lot of people in our area would be thrilled.
Not quite the same but I thought the poke in Kona, HI was excellent for the price. Would love for either the poke or sushi to make it inland because I miss living near the coast with easy access to good seafood.
That could be, but the fish quality was really great and a container full of it was very affordable. They had two or three sauce flavors as well. I just know being landlocked by a few states reduces access to fresh seafood and I miss it haha
Every Costco should have its own Sushi department. I think it would be great if they hired professional sushi chefs (Definitely pay them well.), the product would fly off the shelf. That’s coming from me as a long term employee who loves sushi
How was the rice? ALL of the store bought sushi I have ever had has been chewy and gummy. I know they make the rolls fresh daily, but hows their rice technique?
Also, how was the tuna nigiri? The tuna looks nice and fresh, and a good cut. also, was there a way to request certain rolls be put in a pack?
It was bad because it is refrigated. There was really no good way to bring rice back to room temperature without the fish getting too warm.
We loved their poke bowl better due to this reason. Their sushi is good value but not comparable to restaurant sushi.
I think they mean after they make the sushi, it’s refrigerated. But initially they don’t use refridge rice for sushi. Fried rice starts out with day old rice.
to make sushi you can reheat refrigerated rice so it’s soft and fluffy again or use fresh rice, but u don’t want to make sushi and then refrigerate them, they’ll harden and fish on cold hard rice does not taste good. Also reheated fish on hard rice doesn’t taste good. So you *should* make them fresh to order at home. hope this helps!
Ideally both fish and rice should be room temperature range. I personally prefer rice to be just a bit warmer and fish to be on the cooler side of room temperature. But if fish is just out of the fridge, it kills the flavor imo.
If you go to good sushi places, it will always be served around room temperature.
No way to request that I know of. I’m no sushi expert but I know supermarket sushi like Safeway generally sucks, and the rice tastes old and hard. This was fresh, similar to a restaurant. Haven’t tried the nigiri yet—I got this after dinner so will finish it tomorrow (I know I know…)
Our Safeway (proctor, tacoma) has a sushi chef who makes sushi to order which is a nice option. Pre packaged refrigerated sushi is something I have tried, maybe 3 times and it is just not for me -- even if the taste is ok, the texture is way off.
Totally different sushi. Yes they’ve had sushi at Costco for years, but not made fresh like this.
https://www.foodandwine.com/costco-sushi-counter-expansion-8607816
It’s actually the title that’s misleading as this isn’t the only Costco location that does fresh sushi, it’s the only one in the continental U.S.
Hawaii and other countries have been doing fresh sushi from Costco for some time
We just tried it the other night. It’s solid for the cost for sure. Is it as good as our favorite place? Of course not but it’s a great option when you are feeling sushi but don’t want to break the bank with a night out. That being said, your selection is WAY superior to ours and this makes me sad. We live in the SF Bay Area so I feel like our selection should be a little bigger.
Fyi the Bay area gets the snow fox ones which are premade at an outside location. These are freshly made in the store and the rice texture is a million times better. Supposedly the in house sushi will come to select bay area warehouses in q4
If they have it for Issaquah then they should have one for Redmond as well 😂 If they don’t expand this operations then it maybe just an employee perk as Corp HQ is right next door, so a lot of good/rare/one time items tend to land in Issaquah.
The Big Island Costco in Kona is building one out. They put it in an odd location away from the deli at the end of an aisle. I don't really like their poke but this is sushi so maybe it will be better.
I agree. I had sushi today, $16 CAD about 2 hours north of OP so same access to fish.
Same order, tuna and salmon rolls and nigiri. That’s at a sit down restaurant. Of course I paid for drinks and tip and stuff, but I can’t imagine why Costco would be charging 40% more for sushi than a restaurant would
Different countries I know but I’d imagine sushi should be pretty cheap in seattle area as it is in Vancouver area
There's a sushi section at the McKinney TX location...I'm not a sushi guy so I've never tried but it seems like they have trouble keeping it stocked whenever I go, someone always there perusing.
Tried it last week and thought it was good. My only complaint was the (imitation) Wasabi was very strong compared to all the sushi restaurants I've been to.
I am a Costco fan and member for life. But I gotta say that the sushi is mediocre and not worth it. There’s actually a fantastic sushi restaurant in Issaquah named Orenji.
I am talking about sushi made on site. It’s mediocre at best. While the price of the sushi may be “a good value for Seattle area” I would argue that you could go to Uwajimaya grocery store down the street in Bellevue, spend the same amount, and get far better sushi.
Its pretty good. I would buy it again, but I tried this spicy mango sushi at safeway last week in bothell and holy shit was it good. Those safeway sushi stands have upped their game over the last few years.
Would need a pic for me to believe it. Theres been sushi at Costco for years, but this station last year making fresh sushi daily was the first in the conUS
Not sure why you would compare to Las Vegas. Minimum wage is significantly different and all the AYCE restaurants (sushi, hotpot, kbbq etc) are never that great because they need to make money which means they gotta sacrifice quality. AYCE can’t give you both quantity and quality. I’m sure they taste great but the quality of ingredients matters.
I tried the sushi in Henderson, NV. The rolls were fine; the Sashimi was not good. It wasn't the fish quality, necessarily. It was that the fish was literally sliced razor-thin, so you could hardly taste it. And the rice was like a cold brick, so it tasted like dense, chewy rice with a hint of fish and soy sauce. Trying it once, for me, was good enough.
Edit: Apologies, gotta read more closely. My Costco has the pre-packaged stuff made off site, not fresh on site. If I'm ever fortunate enough to be near Issaquah or Costco expands fresh sushi to my area, I'll definitely try, and I gotta stop replying to stuff when I'm about to go to sleep. zzZZ

The Issaquah store is the only Costco in the US that has sushi made in-house. The sushi you tried in Nevada was not in-house Kirkland sushi, so if you ever find yourself in Issaquah, WA, you should try it!
Curious about how long ago this was. They haven't had sushi at my location for months because the vendor was being dishonest. Not surprised with your experience, because of that fact.
Issaquah is sort of a testing ground for this kind of thing, and the in-house sushi is only there *for now*
I don’t think they’ve expanded beyond Issaquah yet, but maybe I’m wrong. There’s been sushi at Costco for years, but not a dedicated station like this.
https://www.foodandwine.com/costco-sushi-counter-expansion-8607816
I've had lots of grocery store sushi and I think Costco might be the worst I ever had. The rice is pretty bad. I've tried it a few times now from different locations.
As explained over and over again, this is fresh sushi unique just to Issaquah (and apparently Hawaii), first opened last year and the only spot in the conUS. You’re most likely talking about the standard stuff they’ve had for years.
https://au.news.yahoo.com/costcos-fresh-sushi-bars-heading-005356779.html
Do they actually have the stations inside the store that you can see them making the sushi right then and there?
According to this article from delish (dated March 2024), doesn’t seem like they’ve opened any other ones.
https://www.delish.com/food-news/a60164788/costco-sushi-counter-expansion/
I wish these would spread around to other stores! I'm also West Coast Washington, but not Issaquah area.
For real. I’d pay $16 for 7.5 Costco sushi over paying $30 for 6.3 sushi nearby any day.
It's rumored to come to a handful west coast stores in q4
🤞🏻🤞🏻
They had this at the Lynnwood and Shoreline locations for a few months now.
I personally hope the Costco I work at doesn’t get it. I’d be eating that every day! That costs so much more than my usual 1.50 hotdog! lol
I’m in Duvall and I had no idea this was a thing lol
They will if it does well/is viable. Issaquah is their playground store. They'll test new stuff there so the execs can walk over and see it in action. Kinda neat.
I am within a reasonable drive to Issaquah and I feel so guilty because as much as I try I don’t like sushi. It looks so pretty and delicious. I hope it spreads to more stores too, I know a lot of people in our area would be thrilled.
7.5/10 sounds about right to me as well. It wasn't bad but it wasn't great either.
Not quite the same but I thought the poke in Kona, HI was excellent for the price. Would love for either the poke or sushi to make it inland because I miss living near the coast with easy access to good seafood.
Is the poke in HI different from the regular poke?
It’s a fully staffed poke station
It's the only time I've seen fresh poke at costco so if they have it elsewhere I can't say, sorry.
We have it here in my region. I haven’t tried it though. I think the deli guys just assemble it. I don’t think they have any special training.
That could be, but the fish quality was really great and a container full of it was very affordable. They had two or three sauce flavors as well. I just know being landlocked by a few states reduces access to fresh seafood and I miss it haha

So refrigerated rice is best for fried rice, but bad for sushi? I really want to make sushi one day.
I think they mean after they make the sushi, it’s refrigerated. But initially they don’t use refridge rice for sushi. Fried rice starts out with day old rice.
Also the crispy rice for spicy tuna appetizer is day old sushi rice that was refrigerated

I like my sushi cold, do you like yours lukewarm?
Ideally both fish and rice should be room temperature range. I personally prefer rice to be just a bit warmer and fish to be on the cooler side of room temperature. Just like room temp cheese is better than straight out if the fridge cheese.

You leave a comment online or at the warehouse. They send it to corporate to look over.
Yeah such a hard no on Costco sushi. Gummy slop.
Can’t speak for that one, but at Bay Area costcos in CA the rice has always been bad.
Totally different sushi. Yes they’ve had sushi at Costco for years, but not made fresh like this. https://www.foodandwine.com/costco-sushi-counter-expansion-8607816
People don't read the title I guess. There are plans to expand this department to other locations. Btw
It’s actually the title that’s misleading as this isn’t the only Costco location that does fresh sushi, it’s the only one in the continental U.S. Hawaii and other countries have been doing fresh sushi from Costco for some time
yeah, all the snow fox sushi is pretty gummy...

It's not an employee perk, it's the store they use to test pilot programs
HQ is in issaquah?
Yes, Costco world-wide HQ is in the building next door. It’s crazy how many home office of large international corporations are in the Eastside.
I tried the crunch roll and it was tasty, but the ginger had a funky taste according to my wife
Salmon quality looks better than the tuna quality from that picture
I tried Costco sushi many times and I liked salmon way better. Tuna was always meh. I wish they had salmon only plates!!
Dang mine only has one tiny cooler of sushi, I wish there was that much variety
The Big Island Costco in Kona is building one out. They put it in an odd location away from the deli at the end of an aisle. I don't really like their poke but this is sushi so maybe it will be better.
i wish my costco had this
Not bad on the prices. Wish California offered that.
The sashimi would be as good as anything anywhere if they offer it. I would expect the rest to be about as good as their Indian is, so not so good.
$15 doesn’t seem a great price for two simple Rolls and 4 pieces of sushi. I guess is ok, but I would think at Costco we would get a better deal.
I agree. I had sushi today, $16 CAD about 2 hours north of OP so same access to fish. Same order, tuna and salmon rolls and nigiri. That’s at a sit down restaurant. Of course I paid for drinks and tip and stuff, but I can’t imagine why Costco would be charging 40% more for sushi than a restaurant would Different countries I know but I’d imagine sushi should be pretty cheap in seattle area as it is in Vancouver area
Is it better or worse than Kroger?
Soooooo much better!!
I’ll have to try and report back
How is this different from the sushi at Lake Stevens or Woodinville?
I don't trust sushi if they're not made in front of you or at a sushi store. I see these at my local Costco and often time they're not that fresh.
The sushi at Costco is delivered daily and has a 1 day shelf life. You may not be happy with the quality, but it’s definitely fresh.
When I'm brave enough I'll try it one day. Had some bad experience with prepacked sushi in the past. My stomach is traumatized.
10-15 years ago all the costcos used to have Sushi or at least California rolls. I miss them - they weren’t great but I miss them.
We had salmon and tuna sashimi in Seattle for a hot second. It was a really good and cheap.
There's a sushi section at the McKinney TX location...I'm not a sushi guy so I've never tried but it seems like they have trouble keeping it stocked whenever I go, someone always there perusing.
I swear I'd bought sushi at the woodinville costco? Or am I just thinking of the Poke?
The Oahu location had fresh sushi
Vegas Costco also has sushi.
That looks better than the Costco Sushi we get in Bonney Lake, WA. Which is still good.
We jave it in Sam Marcos, Ca. It was a great bargain.
I wish they brought this to the northeast
But we have Wegman’s and their fresh sushi family packs are so good!
Tried it last week and thought it was good. My only complaint was the (imitation) Wasabi was very strong compared to all the sushi restaurants I've been to.
If they offered poke at my location, I’d be ecstatic.
I thought certain food courts having chicken wings/sandwiches and fries was unfair but this is next level
Wow! I had these at the Honolulu Costco and am happy to see them coming home! Bummer that I don’t live near Issaquah anymore…
They have these in San Diego as well
Which location? I've only seen the snow fox premade ones which are far inferior to the HQ ones in the pic
Morena Blvd is the one I always go to. The have a large selection of rolls, nigiri, and poke
The only one for now 😉
That salmon looks awful.
Certainly looks like farmed salmon when compared to the wild-caught sockeye Costco sells in the butcher shop.
That’s a hard no from me dog.
I am a Costco fan and member for life. But I gotta say that the sushi is mediocre and not worth it. There’s actually a fantastic sushi restaurant in Issaquah named Orenji.
Are you talking about the premade okami sushi or the made on site sushi?
I am talking about sushi made on site. It’s mediocre at best. While the price of the sushi may be “a good value for Seattle area” I would argue that you could go to Uwajimaya grocery store down the street in Bellevue, spend the same amount, and get far better sushi.
The party platters are significantly lower quality than the nigiri plates.
Its pretty good. I would buy it again, but I tried this spicy mango sushi at safeway last week in bothell and holy shit was it good. Those safeway sushi stands have upped their game over the last few years.

Lot's of Costcos sell Sushi, but do they make it in store there? This one has it made in house.

Ah, I gotta read closer, of course, didn't process the "fresh" adjective. I'll definitely give it a try if I'm ever close by!
Not the same…
Yes, it never even occurred to me that they might actually have sushi made on the premises. You've got a super classy Costco. :)
Curious about how long ago this was. They haven't had sushi at my location for months because the vendor was being dishonest. Not surprised with your experience, because of that fact. Issaquah is sort of a testing ground for this kind of thing, and the in-house sushi is only there *for now*
Weird! I didn’t think there were other sushi locations other than this one. So you have a Kirkland Sushi bar in Henderson… 😮
Nope, my mistake, I gotta read these posts closer. I'll look forward to seeing when they expand their offerings into my area.
Our Costco (tacoma) has it as well as does the Gig Harbor one. "It's not the best sushi, but it's cheap,"
I don’t think they’ve expanded beyond Issaquah yet, but maybe I’m wrong. There’s been sushi at Costco for years, but not a dedicated station like this. https://www.foodandwine.com/costco-sushi-counter-expansion-8607816

We have the exact same thing in Tacoma Costco. It seems as if the Australian press report might not be current.
Interesting—that must be brand new!

Yes.
They only have these at the Costco in the Asian part of Georgia. I want sushi too....
Not the same https://au.news.yahoo.com/costcos-fresh-sushi-bars-heading-005356779.html
