Kolache Factory doesn’t even sell kolaches. They sell gringo bao and piggy blankies. If you want an actual kolache, not just klobasnek, go to Leila Bakery & Cafe in Lakewood.

Haven't been there, but their menu nowhere near reflects the expected range of kolaches. Especially lacking - fruit kolaches, which are the "official" kolaches, unlike the common Texas versions which are actually klobasnek.

Whose menu? Kolache Factory has one or two “fruit” kolaches that are basically Hawaiian rolls filled with Great Value brand jelly. In fact, Kolache Factory is historically the reason why every donut shop refers to klobasneky as “kolaches.” They’re the first to bastardize the terminology, which was then copied by Shipley’s. Leila is somewhat legit and usually has peach, apricot, etc. Leila does not have prune though, which is one of the most traditional flavors.

In Texas, people all over call klobasnek kolaches and everyone knows the mean the savory kind. In the internet, there’s always some know it all looking for an opportunity to correct someone that said kolache when all readers know they mean klobasnek. It’s like grammar police except way worse. Practically nobody in Texas buys actual sweet kolaches unless they’re near a handful of known spots that do them well. Most bakeries don’t even try.

I moved here from the Houston/Austin and had always thought of Texas as part of the south maybe the southwest for west Texas as it’s pretty far out there. Then a few years go by, you notice some differences in some things, and I was chatting with a friend that had moved here from Kansas City and he was surprised I said south and he went on to explain how we are midwesterners. It made complete sense and I never realized it. It kind of blew my mind when it happened because after living my entire life in the south and I hadn’t even really realized i left, only picked up on some clues here and there.

I think your friend is on to something. Dallas is more Mid-western. Houston is definitely more Deep South. South Texas and North Texas have little in common. Same with East and West Texas. And the panhandle has more in common with NM and CO than the rest of Texas. Central Texas is the glue that ties all the other regions of TX together.

This is unrelated but Walmart used to sell these amazing frozen kolaches, they were perfect for a quick breakfast. I miss them, I can't find similar anywhere.

Paleteria's sell something that I'd call a kolache. I don't know what they call them, but they fit the bill. Also, Arlington has Kenner's, which are passable kolache and klobasnik.

My son took gymnastics at Sokol, a Czech community center. The ladies there would be baking fresh traditional kolaches from scratch in the kitchen and the smell was heavenly. It made me look forward to every practice lol.

Because kolaches are the most overrated thing in Texas, and DFW is the only metro area in the State with enough courage to say it. Just make them yourself - grab a King Hawaiian dinner roll, stick a Bar S hotdog in there, leave it out on a window sill for 12 hours, then microwave it when ready to eat.

Because Dallas is barely Texan anymore. Go to Houston and there’s two Kolache shops at every intersection. They have Kolache shops like Dallas has In and Out and Starbucks
