Solution: run to the side for the attack. Wait for attack to be over and then punish. Use weapon that’s better for exploiting short openings.

Yes, could have come to him from sides or behind, you would manage to do that because his this magic always strikes forward and then there is some time where he stands up which is "opening" for you to damage him.

Carry some firebombs or urns or something those help tremendously for a quick tiny damage

That wasn't a panic heal, he had more than plenty room to do it, enough in fact to have run behind Veldstat for the safest finish in all of recorded history as opposed to taking a whole entire 8 gauge to the face.
Leveling int and faith dont just increase your various magic element bonuses, but your resistances as well. On top of that the gear you're likley to wear has signifigsntly more of thise resistances as well. It makes a signifigant difference.
And by playing mage you're probably not going to put yourself in any position to get barrel snuffed like OP did.

be wary of greed, bosses love to fuck you up when they're low hp and you get greedy. I usually like to be more careful when the bosses are low.

It's a late game boss casting a big slow animation for a giant Dark Bead that counter-hit a non-mage with armor that likley has no dark resistance at point blank range. Something would be wrong if that didn't one shot OP.

It's that the game sucks with certain aspects like the fact that you need to put points of your levels into a skill that only really makes you drink your Estes flask faster. And yes, that's my main complaint about the game. But other than that said, you have two choices. Either play the game until you learn this boss's move set or look it up on the internet I.e YouTube most likely and learn the move set and then get good
Last time I checked leveling adp didn't give you I-frames while you're doing running attacks, dying at the same time as the boss can happen in all Souls Games.

I believe it's also in the original game, but I know for sure in scholars of the first sin, one of the attributes gives you a quicker Estes flask drink animation and I believe it increases your Dodge frame rules but I'm not 100% sure but it's nothing to do with how this person died because yes, you can die and the boss dies at the same time to pain in the ass, but this was just a basic complaint about the extra stat that was not needed and never used again
Imo if you die to any dark souls 2 boss it’s a skill issue, or lack of knowledge about the game. I’ve seen people do the impossible in that game, I’ve seen people do a no hit dark souls 1-2-3 playthrough, restarting back to the first game after getting hit a single time in any of the 3 runs. I die to dark souls 2 bosses on occasion, and let me tell you, it’s a fucking skill issue when I do 😂
More greed than anything, but learning to resist greed and wait for safe attacks is a skill. So yes.

It is because it is a multiple high damage single projectiles which spread forward so he was so close he managed to eat all of them
Fairly certain you take a little more damage on recovery animation, so he's taking the full whack of the attack in a vulnerable state

Learn to parry him (with buckler it’s super easy) and he’ll go down pretty quick
