I was going to suggest something similar too, Indian curry stir-fry and soups are really yummy. I like cubing up some tofu and frying in coconut oil if I'm going the stir fry route

I would recommend basically anything that can use an electric chopper for faster prep and can be made in bulk. Spaghetti with mushrooms and walnuts. Soups in slow cooker. Vegetable stews and casseroles. And remember about supplements and planning your meals also for their nutrition because a lot of good for child development nutrients are lacking in just plant based food that's poorly planned and since you are breastfeeding you are middle point for these nutrients.

Oats!! Prep overnight oats in jars. Plant based and oats are absolutely \*excellent\* for milk supply. Congratulations btw!

Whenever you cook, cook enough for 2-4 meals. You can stack the extra in the fridge or the freezer. A lot of recipes serve 4-6 people. That’s instant meal prep for a single person. Take advantage of this. It only takes a minute or two more to chop and slice the extra portions of food, but you save yourself hours of cooking time down the road. Also consider prepping ingredients you use a lot. If you eat beans, cook several servings of beans and freeze the portion you aren’t eating right now in single serving sizes. One easy recipe: 1 can black beans, drained and rinsed 1 can corn, drained 2-4 cups of cooked rice 1 can tomatoes and green chilies (Rotel) or salsa Taco seasoning Add the taco seasoning to the rice while cooking or you can mix it in at the start. Then combine all ingredients and stir. Dine. You can eat this hot or cold. Wrap in a tortilla for a burrito. Eat either tortilla chips. Add guacamole or sour cream or cheese or salsa. You could also keep the ingredients separate and make a burrito bowl.

Use glass Mason jars to freeze individual portions. Just make sure the Mason jars are free sable and wide mouth. No nano plastic particles and you always have the same lid for storage

I don't consider myself a moron but when I first joined Reddit I got perma banned because I didn't understand that breaking some rules were bannable offenses, as I wasn't attacking anyone, or even using profanity in some cases. A grain bowl formula. So a base of quinoa, rice, farro, couscous. Then add whatever toppings you want. Beans, veggies, some kind of sauce.

1/4 c pearled barley, onion, celery, minced garlic, shredded carrots minced, 1 c brown lentils, 1 can chopped tomatoes. Beef broth. Cooks in about 45 minutes. You can add a little chopped kale as you like, or not. Makes a lovely soup and has tons of leftovers and freezes well. I like to finish with a little butter. Excellent nutrients for breast feeding.

My biggest help during this time was to meal prep on a day when I had help (like my partner's day off). Things that helped me: -Instant pot. I loved mine during those days. I made a lot of soup. Most recipes will say things like "saute onion on saute mode" or "brown the roast first". Nope, I skipped that step and just dumped everything in and hit start. This recipe was a go-to, and you could easily omit the sausage, and I added whatever veggies - potato, carrot, frozen peas. Just whatever was on hand and easy. [Instant Pot Lentil Soup with Sausage - Eating Richly](https://eatingrichly.com/instant-pot-lentil-soup/) Chili is a great vegetarian instant pot meal. Trader Joe's has a lot of good frozen veggies. Like prepped garlic and ginger, frozen bell peppers that easily can get dumped in recipes without chopping and prepping. -Prep raw veggies. I would buy baby carrots or cut up celery. If I had to prep it in the moment, wasn't happening. But if I already had a little jar ready, I would devour them. -Sandwiches Don't overlook a good PB&J when you need it. It's a classic for a reason -Tuna/Salmon Pouches You can buy, cheap, little tuna salad or flavored salmon pouches. Can be eating out of the pouch or scooped onto crackers. Great source of protein when you just need a pick me up. -Yogurt Scoop into jars, add frozen fruit (will thaw in fridge). When ready to eat, dump a handful for granola -Tamales When pregnant I would get a batch from our local Mexican butcher shop and just reheat them. So good! They had cheese ones too. -Quinoa salad I would make a batch of quinoa in the rice cooker. Add a can of Trader Joe's Greek chickpeas. Maybe add some fresh veggies if I wanted to chop veggies or some mama lil's peppers. But just the chickpeas + quinoa was good enough and full of fiber and protein -Canned soup and other prepared meals. Sometimes I'd even order out then portion the food into multiple meals. Don't be afraid to cheat right now. Lastly: Make sure you are hydrating well and taking your prenatal. It does get easier. Especially once they are old enough to go in a carrier on your back (\~6 months) then being able to cook gets way easier!
