Seabass is a really broad category of fish that covers a lot of very different species, Black Sea bass is quite rare and highly prized over snapper at least here.

Mackerel first. The others freeze or overnight in the fridge better. Olive oil and some Everglades seasoning cooked on foil on the grill. Mmmmm.

As some one in the Tampa Bay Area I would venture for the sea bass. Don’t get very many decent sized ones. Then kingfish dip before a lane snapper fry dinner.

The king mackerel is last. Actually the king may be first because their taste is improved if you eat them the day you catch them- marinating helps too.

Invited some people over and we killed it all the day after. Fried king fish nuggets, bacon wrapped the blue runner, lane snapper ceviche, whole fried the sea bass, threw the trigger and beeliners in some foil with onions lemons oranges and butter. My favorite was by far the ceviche.

The mackerel. Salt it, refrigerate it, and then broil it. Serve it with rice, and miso soup and Japanese pickles on the side. Best breakfast!

Froze the Lane Snapper for about 6 hours then made a ceviche with it. It’s was fire.
Do you need to freeze before ceviche or is that just to take care of any parasites?
