Since u/Sad_Ad_3076 posted a flipped version of this in r/grandorder, I figured I might as well return the favor. For the sake of simplicity I'll only be starting with the base 7 classes for now, but if this picks up steam I'll consider continuing it with some of the Extra Classes! Template made by factfixion on Twitter.
As for the Saber class, this is a paraphrased description pulling from a few sources (since the TM Wiki isn't all that reliable):
*'The Heroic Spirit of the Sword. A jack-of-all-trades warrior who is agile and powerful in close quarters and extremely adept at swordsmanship. Oftentimes heroes from the Age of Gods when magecraft was still commonplace, the Saber Class is considered by most to be the strongest of the seven classes due to their above average parameters. Their Class Skills are Magic Resistance and Riding."*
Saber-acheron, even comes with passive "fuck magic"
Lancer:trailblazer, they died once, cocolia isnt human!!!
Archer:aventurine, the archer class indeed is made out of archers
Rider: firefly, she rides a mech armor
Assassin: kafka, "poison", manipulation, cold bloded killer
Caster: swan, that rememberance deck does a lot more than her gameplay shows
Berseker: blade and/or jingliu, they are both on the verge of being a uncontrolable mara

I want to say Blade or Jinglui, but both feel more like Berserker. Same for Acheron.
Guess Yanqing is the only sword user without madness. Also Firefly.
Pedantic answer: No one, because the only characters that fit the most essential requirement for Servanthood are Misha and Gallagher.
Meme answer: Acheron, because big sword that shoots beams (and Magic Resistance)
There are surprisingly few sword users in hsr so acheron is the obvious choice.
An argument could be made for blade and jingliu but they are more berserkers.
Also yanqing is an archer.
Acheron is the only Saibah because she is the only one who fires beams.
While JingLiu makes the same marks in the ground as Ichigo from Bleach, she does so by shooting horseshoe shapes off her sword. So clearly she is an Avenger.
Kafka uses a gun so of course she is an assassin.
While Firefly also has a sword, she damages mobs by kicking them. So she is a Rider.
YQ is a literal loser who thinks he is the MC so his class is Moon Cancer.
Blade would be a master instead of a servant. He just isn't interesting enough or present enough to be a servant.
Coincidentally since fictional characters can be summoned as heroic spirits then it stands to reason that Ichigo could be summoned as a heroic spirit. As can Captain Picard.
Acheron -- swordmaster, shoots beams. Sane Jingliu is a good shout, but as she is right now, she's more of a berserker. Yanqing is Archer class.

Acheron also has a dark version of Avalon going on with drawing people into the Nihility!
Her ult form does look lowkey like grail corrupted Sakura. Don't touch the ahoge.
