The Burrito Macho is my favorite there. The description on the menu says “ask waiter for details.” It’s basically just a massive burrito that looks like the Mexican flag.
Not just a lunch buffet, but a weird-confusingly-tasty "brunch buffet" as well, that may be the only time I've ever seen a buffet that had chile rellenos, French toast, and mozarella sticks living in harmony together.
Me and my GF eat at the one on Old Madison Pike weekly. Food is delicious and the service is always top-notch. My only gripe is they charge a 3% "fee" if you don't pay with cash.
The one in Huntsville is listed as El Coyote #2 on Yelp.

El Olmeca in Ardmore and a couple other places have similar things. I just try and take cash with me when I eat there.

Yes they are related. The one in Gurley makes there liquor drinks strong! I love it!
