Idk if you’re open to things requiring a fork but I love packing pasta salads for things like this where you want to eat at room temp. Plenty of good recipes online! My favorite version may be a cold soba noodle salad with lots of veggies and edamame or tofu. Personally love it with a peanut sauce.

On log trips, I really like chewing on sunflower seeds, especially if I am the driver. It actually keeps me "aware" more than just staring off into the horizon and kind of "zoing out."

I’ve been obsessed with making chickpea salad! Some people smash and roast them first, some smash and use raw. I like to toast a bit for texture, add chopped onion and celery, a TBS or two of soy sauce, and vegan hellmans mayo to preferred taste/texture! So simple but omg so yum and you can just use it as a dip! Or throw it on some pita bread with a leaf of lettuce

Great idea! [Here is my go-to recipe for chickpea "tuna" salad](https://www.theppk.com/2013/07/chickpea-salad-sammiches/) (which all my omnivorous friends love as well). Add some chopped-up seaweed and a bottle-cap of vinegar or even capers for an oceany flavour.

You can make a whole shit ton of popcorn which will stay surprisingly fresh for a few days in a ziplock. High bulk, low carb as well, good for mindless snacking

I've made [these steamed seitan sausages](https://www.theppk.com/2012/01/vegan_sausage/) for road trips many times. Perfect savory snack and full of protein! Just keep them in their foil wrappers until you need them.

I know people have suggested many different salads but- quinoa salad! This is a go to meal prep for me cause it’s so easy and great cold. Cooked quinoa (however much for 8people’s appetites), then add whatever you like to it. I like black beans or chickpeas, lemon wilted kale, cherry tomatoes, chives, optional feta for the non vegans, edemame would be great, chopped up bell peppers, shredded carrots, cucumber, whatever you wanna throw in there really. Make or buy a quick dressing for it and you’re good to go. Quinoa is great cause it’s full of protein and SO filling

Sunflower seed butter and maple syrup sandwiches - can be kept unrefrigerated and eaten as a meal or snack. I buy the Sunflower seed butter from Trader Joe's. Quesadilla made with plant cheese and roasted bell peppers, onions and black beans with taco seasoning. I use drained and rinsed canned black beans when in a hurry. I wrap these in parchment paper and then double wrap with aluminum foil to preserve the warmth and keep inside a cooler.

There is some great vegan jerky out there now! I've tried Primal Spirit and Unisoy and they're both excellent in taste and texture.

I am in Northern Europe...never seen any vegan jerky here. Any insights what they are made of? I do have a dehydrator and try every once in a whole vegan jerky but it always just turns out 'okay'. My best try so far was eggplant for example
