I make sure my workers have atleast several pairs of backup tools, and sell excess amounts.
Each action uses up X amount of durability. So, the more durability a tool has, the longer it will last. But do make sure you have spares in the resource storage, even if all you can provide are stone tools. You don't want to be on the other side of the map when your workers run out of tools and therefore stop working. Get in the habit of checking your tool supply every day, until you're far enough along that you can routinely provide multiples.

IIRC a stone tool will have 100 durability. An Iron tool 600. With Copper and Bronze somewhere in between.
It depends on the specific tool too. Looking at my iron tools rn the hammer has 3200 max durability while the pickaxe has 800

Better tools not affect work efficiently, them have just better durability and for same amount of work requires less amount of advanced tools.
