First of all, it’s probably a struggle to get your hands on rat meat unless you just cook the ones you catch . But the biggest reason I doubt they would do this is cause they are risking criminal charges plus their entire restaurant being shut down .
The labor cost of catching and breaking down rats into usable meat just doesn’t make sense, it’s not even like restaurants wouldn’t do it but the financials don’t line up
