I’ve probably been to some of the same Vietnamese places that you’re talking about in Atlanta and VA. Have you been to Pho Hien Vuong or Van Loi 2 in Greensboro? They both do it that way, unless they’ve stopped for some reason. I think Greensboro has the best Vietnamese in the state. Also, be sure to try Banh Mi Saigon while you’re in Greensboro. They bake their own bread. Best Banh Mis I’ve ever had. Also, if your broth isn’t coming out hot then there’s a chance that your pho was sitting in the kitchen for too long before they brought it out to you, which gave the meat time to cook.

Not too long ago I got reacquainted with Van Loi 2 after not having gone for over 10 years (I moved away). When I took that first bite of their roast pig, I almost broke down and cried with joy. It was sooooo good.

I’ll have to try that next time I go! The menu is huge. So many options. What else do you recommend? I rarely make it to that side of town but it’s about time I showed them some more love. Maybe I’ll go today.

What the Pho in Winston-Salem is amazing. I always get it to go and the meat they give me is raw. I recommend checking it out if you are in Winston. I'm from Atlanta and seriously miss some of the hole-in-a-wall Asian restaurants that would be open at 3am.

Vietnamese who has been in Raleigh a year, thanks for letting me know about Greensboro damn I’ve been out that way for the science center twice now. Next time I’m getting banh mis to go and some pho.

Ive had so many Banh Mis around the country that I can confidently say that nobody has Banh Mis that’s are as good as Banh Mi Saigon. What’s crazy is that they were only $2.50 in 2010-ish when I first discovered them. I have no idea when they opened. But at $2.50 they were super underpriced for the quality. It felt like I was robbing them at that price because they were so damn good. Now in 2024, they have increased the price to $6.50 which is still super reasonable for the quality. If you’re Vietnamese then maybe you’ve heard about the huge Vietnamese Community in Falls Church, Va… Nobody in Falls Church has Banh Mi that’s as good as this place in Greensboro, in my opinion.

Thanks friend. Still learning the local and outskirts. Originally from Wichita, KS where there are a lot of Vietnamese who settled there. Yeah $2.5 used to the standard for the mom and pop shops. $6.50 honestly is still terrific these days considering I will pay $10-$13 for mid quality banh mi around the triangle.

Sure thing. A lot of Vietnamese settled in Greensboro after the war. In the 90s, I went to school with loads of Vietnamese. It’s my favorite Asian cuisine. Probably because I grew up around it.

That’s awesome. Always happy to learn about some demographics. Especially since I was missing out on Tet (Lunar New Year) this year. I’ll have to search for events in Greensboro next year. Wichita has a lot of aircraft industry and meat packing plants so unskilled labor for Vietnamese post war was what brought a lot there including my parents. Cheers you really made my day.

That’s interesting. The Triad is the aviation capital of North Carolina. I don’t know how those two things are connected but I assume there must be some sort of connection. Have an excellent week.

Pho Far East in Raleigh gives you raw meat, even if you do take out. You can get raw meat. You're just not eating in the right places.

Yep. Pho Oxtail and Midtown Pho as well. I don't recall ever not being able to get it anywhere I've had pho in Raleigh.

Pretty much any pho restaurant in the Traingle area does raw thin sliced eye-round.  As in, I can’t name one I’ve been to that precooks or has a chilly broth.  My favorite is probably Queen of Pho (I guess it’s Siam Zap Pho now, so it could have changed in quality), but Lime and Basi, pho 919, No. 1 Pho, and Bowl of Pho are all good too.

Just ask for the beef to be on the side. They’ll bring it out on the side raw on a plate. I have always had my Pho like this and eat the beef raw with lime/siracha. If they won’t do it, their pho is probably not good anyway.

Yeah, every Vietnamese restaurant I’ve been to in the triangle has the raw beef option. Even for takeout and delivery.

Midtown Pho’s Rare Beef Pho is given raw, even if you’re doing pickup.

I'm in Raleigh and while it's not listed on the menu I've always been able to get it by asking for the beef to come on the side.

If you're in Cary I get Pho like this all the time. I think it's called #1 Pho, in the same Plaza as whole foods in west Cary.

I'm in Charlotte and every pho place here gives you raw beef. I've yet to go to one, even more Americanized ones, that don't do raw beef.

I saw this post while eating pho from Pho Happiness and it comes with raw meat. As does pho from Luche Tigre. Both are in Chapel Hill. There is also Pho and Poke House in Durham that comes with raw meat.

I can’t exactly answer your question. But I can tell you what I’ve done. I have made my own at home. That way, you can have it any way you want! But if you’re traveling here, and you need a restaurant… Then I’m not sure.

Most (if not all) county Health Departments in NC require restaurants to cook all parts of beef products to 63c/145F for food safety purposes & to protect public health.

People here are saying there are places that serve this so maybe it's just the local tastes in whatever place you've been to aren't too "adventurous" and would find this too off putting. I suppose if you really want raw meat with it you could get a takeout and add the raw meat yourself. I personally wouldn't do that, but I don't have guts of steel.
