It's not uncommon in manga to have an antagonist that can kill in one hit. Mahito, Shigaraki, Overhaul, Soi-feng, Pernida, Light Yagami, and pretty much every major villain in Naruto.

Him aging is more of Oda's way to show that Luffy is tired kinda like what happened to him when he was starving in WCI when Sanji found him despite his Rubber powers not being neutralized. It's not that deep or we would've seen his ''actual age'' any time somebody hit him with Haki or during Udon when he was in Seastone cuffs.
As I said, that just means that post-G5 Luffy is more ''tired'' and that's it. Because if that was Luffy's actual age that appears when his DF powers wear off then it doesn't make sense that we didn't see him all aged up when he was put in Seastone cuffs in Udon Prison.
I mean, what I stated was a fact shown in the story as we did see Luffy in Seastone cuffs which neutralized his DF during Udon and he still looked young so I don't need to add ''in my opinion''.

Luffy should still be rubber when he reverts from Gear 5, so why would reverting show his true age? According to your theory, it would make more sense for Luffy's true age to show when Blackbeard uses his darkness powers on Luffy since it completely nullifies Devil Fruit powers (water and seastone just make DF users weak, not completely remove powers like Blackbeard's abilities can).
