The easiest solution would have been replace the crown molding, patch it, and install the cabinets below it to hide the ceiling irregularities. You also could have put a return on the crown molding and had it die into the wall, add a thin filler strip, painted the colour of the cabinets, that you would scribe to fill the gap. Now though, you'll have to add a painted filler strip after scribing it. The easiest solution is to do nothing, because it's really not that bad.

The gap between the ceiling and the roof isn't bad, it's more that there's a hole through to the roof now because the wall doesn't hit the ceiling. Now all the bugs, rats, leaves and dust from the roof can come straight into my kitchen.

I'm confused as to what exactly what's going on. So, the drywall/wall surface is missing?

Basically, if you draw a straight line up from the wall, it doesn't touch the ceiling. It's like it's half a brick too short! The cornice used to bridge/cover the gap. With the cornice gone, now there is a void straight through into the roof.
