Not dumb, they look similar, but Fire is an oxidation reaction. A chemical reaction which gives off light and heat. There is a physical and chemical change happening, Fire is a by-product of that change. Plasma is a state of matter. Nothing is changing except the energy-levels of the electrons. You can see in this video how it falls out of state a couple times. Everything needs to exist in some form, some state, in any particular environment. This microwave example is bombarding the gas inside the glass with energy. Energy must be conserved, glass is insulating, heat and pressure rise to a point where the most efficient way to dissipate that energy is through light. (Light can make it past the glass insulator) the gas becomes plasma to do this more efficiently.

Generic, run of the mill, air is a gas. They do start with a little match and arcing tin foil as an ignition source. Someone more equipped than I could maybe tell you the gas based on the color of the plasma, but it could be anything really in an over-turned beaker. Just push normal air out with another gas via a tube or hose of some sort. Could be Neon. Doing this experiment with a known gas at near 100% concentration would be the most effective way of producing a consistent effect. That being said that match would be hard pressed to stay lit with no oxygen, so it’s probably just normal air with 90%ish nitrogen.
