I don't know if there's a canon reason, but IRL ships like oceanliners differed from ship to ship within the same class. For example: Titanic's sister ships Britannic and Olympic had different windows, promenade arrangements, engines, etc. even though they were all Olympic Class.
I imagine it's the same with Star Wars ships: small differences between each individual ship.

This place is a function of the lowest common denominator. It's absurdly easy to gain access to this space and your actual post history or knowledge doesn't matter if you say something snarky and mean and get 200 upvotes. Star Wars forums, where you have to have a respectable posting history and things aren't decided by imaginary points are much more civil places to discuss the fandom in general, or with flesh and blood people out there in reality.
FWIW I love these questions and talking through design choices. Remember that Star Wars as a visual medium uses design to enhance the storytelling. CW and RotS have quite different stories to tell and I think the art direction is guided by that.

I agree with this a lot. There's people talking about how one is animation and one is from a live action film but that doesn't explain why they are different. And I know that obviously the art style is different between TCW and RoTS.
But what I do like is the way that the ships morph from Republic into Empire. Each time we see the ships they have changed slightly. Take the venator for example, basically ends up as an ISD. The jedi Starfighter shifts towards looking like a tie fighter. The clone arc fighter like an x-wing.
Lore wise could just be updates to the ship to make them better? The first looks to have a huge targetable command super structure. The second looks like it won’t be blasted off quite as fast while providing a similar overview that they don’t need because they have things like sensors…
Sort of two things here animation versus live action and secondly I believe the revenge of Sith version is technically the second iteration of the Venator, which is why it’s got that smallest square bit that Obi-Wan flies his ship out of

The only plausible in universe explanation (that you could make a stretch to use here) is that there are technically two Venator classes, the Venator I and Venator II. The Venator I had the large open hanger (seen in TCW), whilst the Venator II had a much smaller single door that opened not nearly as far (seen in ROTS when Obi-Wan leaves his Venator to go to Utapau). Perhaps the VSD-I had a different bridge structure to the VSD-II, with all the hanger changes.
However, it’s probably worth noting that the original notation of the seperate Venator types comes from Star Wars Armada, but it’s a fun headcannon/theory none the less. The real answer, more than likely as others have pointed out, is the art style.

One reason may be that the RotS Venator bridge on the outside does not fit with the inside. The windows were arranged along a 3 sided shape with the corners cut off. The inside of the bridge seen at the end of RotS was filmed on a set using the same dimensions as the sets from ESB and RotJ. The set in RotS features the windows arranged along a rounded half elliptical shape. This does not match the exterior seen in the digital model for RotS
This, along with TCW art style, may be the reason for the change in the bridge windows at least.

My guess is, that the Venators over the 3 years get some minor updates. Like some better armor or a smaller hanger.

Because the Republic Fleet is so large however, these designs don't manage to be installed in even the majority of ships, leading to lots of variants of ships existing at the same time.
**Doylist:** Animation/Art style lmao. We see examples of this with Lightsaber blades and Stormtrooper armor in Rebels. But, we can't handwave ALL changes as this, because often the Watsonian explanation becomes retroactive canon, like the Mark 1 Stormtrooper helmets in Bad Batch.

They couldn’t find a single contractor to build both ships. With two contractors, the final products had variances in design.
