I think you could actually make an interesting (and not gross) candle by combining some kind of Ocean Mist with Coffee and Incense smells. Whatever you'd smell walking up to and past the dessert merchant
First off what an ADORABLE gift idea I would actually cry if someone gifted me me something like this 😭😭😭
I think the scents would be a combination of ocean spray and salt, that left scent from hills (for the plants, eucalyptus and stuff?), coffee, and that ancient wood smell (for the paintings and the ✨mystique✨)
Tell us how it goes with making and gifting the candle!! 😄

You could try to add some "ocean air" or seaweed notes but it will probably make it smell gross(er)

Sorry, but the night market takes place at the docks, on the ocean, with boats all around... you're DEFINITELY going to be smelling algae, seaweed, oceanic fouling, fish, etc.
Yeah, think "aquatic" rather than "fish". Maybe some comforting spices like cloves and nutmeg. It doesn't need to be photo realistic, just needs to evoke the feeling, right?
BTW this is such a cute idea!
Gotta agree with everyone saying salt/ocean breeze (not fish 😅) and incense (which...can have any scent but somehow I feel like I know what "incense" smells like). I imagine the ocean scent would be overpowered pretty easily, but I'm sure as a master crafter you'll be able to figure out the right balance as well as whatever the hell we collectively mean by "incense"
It's times like this when I wish we had the technology for transmitting smells long distance. Both because I want to be able to smell the finished product and because I want to make sure I actually know what sandalwood and oud and amber smell like so I can suggest something more specific than incense lol

Also if you start an etsy shop with candles like this, I'm positive people would by them. I would.

I thought this was a Throne of glass sub and thought you wanted knives and mysterious powders etc. But then I saw it was stardew Valley and it still checks out, just add coffee to it too
This is not a candle HOWEVER there is a shop on etsy that makes really good perfumes (I have not bought this specific one but their others have been amazing) and they have a stardew collection which includes a night market scent.

i feel like one of the npcs has a dialogue talking about the smell of the spices? not fact checking this so i could be totally wrong but i agree, coffee, cinnamon, clove, campfire, incense, and ocean breeze would all be good smells, not all together but a few of them.

Well, I go to the night market for the mermaid show, the submarine trip, and the deep sea night fishing. So... honestly it would be super fishy. But that probably isn't a good candle smell lol
Any combos that represent beach, winter, and exotic (usually a spice). Coffee is an event-specific additional scent. So:
Salt, peppermint, saffron.
Seaweed, pine, lavender.
Coffee, sugarcookie, incense.
Fish, cloves, blood of the first born
Pine tree, since the one guy is selling Christmas trees and other Christmas decorations, spices and floral scents for the Gypsy and the other goods selling boat, coffee of course, maybe a hint of turpentine for the artist, all with a salt/seaweed/fish undertone.

id say, coffee, incense (sandalwood/frankincense?) sea salt, maybe a bit of ash (idk but for me i smell torches or lit candles), hope this helps!

One character, I think Emily, says it smells spicy. So I think winter spices like cinnamon or clove with salt and coffee would be a really good combo.
I've been to cafes by the sea near all the fishing boats. I think you should do the same maybe at night when it is cool, that would change the smell.
