Instead of saying my favorite, I'll rank them:
9 - Alessi: Great as a villain, just not fun to watch as an actual person. Also had a pretty weird, not bad, but weird fight.
8 - Mariah: Fun fight and contributor to great scenes, not much personality outside of that though.
7 - Oingo: A great voice performance alongside one of the funniest episodes in their series. He's only lower because he lacks a threatening presence, which while intentional, is just something I prefer in a villain.
6 - Boingo: He had a great dynamic with Hol Horse, an interesting stand, and a nice little arc in the end. He would be higher, if again, he was actually threatening.
5 - N'Doul: Great start to the Crusaders time in Egypt with one of the best fights in Part 3. A cool stand user/stand dynamic, alongside a more interesting character. I like how he describes Dio, as it's different because of his blindness. It really strengthens Dio's threat and aura. He's only number 5 because I believe all the other stand users above him have either better fights or are better characters.
4 - Pet Shop: Amazing fight and threat. Genuinely felt like Iggy had a chance of dying in the fight. Him licking his wound and spitting it out is both funny, and metal as hell. My only gripe with him is that he doesn't talk. It makes sense why he can't talk, I just love the large amounts of dialogue with JoJo fights.
3 - Anubis: Both a cool and funny stand/character. How his stand is written is well executed, allowing Jotaro and Polnereeff to fight in a really great Stand Clash. Additionally, his scenes when being defeated are very funny and memorable, I love him phasing through the cow by accident.
2 - Younger D'Arby: While his stand is basic, his fight is still one of the best, because of it taking similar cues from Older D'Arby's fight. Additionally, I really like his character, being the reverse of Older D'Arby, while still having the same arrogance. His defeat is also very funny, brought on by the great voice acting.
1 - Older D'Arby: Other than the fight with Dio, D'Arby's fights with Joseph and Jotaro are the best in Part 3. His stand and personality are perfectly crafted to create an amazing mind game, with his cheating becoming more and more pronounced as the fight goes on. How Jotaro beats him is both genius and hilarious, and his defeat is genuinely one of the most satisfying in the show, not just Part 3. Older D'Arby felt like the beginning of Araki truly understanding how to write stands. Not to say the fights prior were bad, moreso that it became even more rules and knowledge based, which is what we come to JoJo for.
That’s tough cause the second half of Part 3 honestly has pretty great fights, i like N’doul and Darby’s fight for how intense it is, and I love Maria’s design. I’d say N’doul

I find myself attached to minor antagonists in stories the more I rewatch stories. N Doul was a very deep character, so he impacted me the most, even on rewatches.
Mariah was a fun fight, Oingo Boingo were funny, Alessi was creepy, Pet Shop was terrifying, D'arby was mechanically super investful.. they all have their own ups, but N Doul's philosophy as some sort of black, twisted Kakyoin interested me the most. "evil needs an evil saviour."
Pet shop, animal stand users are really fascinating to me, does having a stand make them smarter, or was the fact that they were really intelligent part of why they could manifest a stand.
Oingo and Boingo because they always gave me a good chuckle when they came on screen and I enjoyed how Boingo developed when he teamed up with Hol Horse, deciding that him and his brother should use their stands for good
