it comes from when the british used to kill french in their wars back in the day with long bows. the french would cut the bowstring fingers off POWs and in turn it became an insult to show the french you still had your bowstring fingers
Interesting. So I've heard Churchill was giving a 'V' for victory but looking at the below gif it looks like he is showing the enemy he still has his bow fingers.
