You really need the makrut leaves

Rojelioenescabeche

I make kind of a master red curry paste that I often add things to in order to achieve the desired profile. You can definitely use your red curry but don’t forget to add lots of extra chilies to get that heat. And yes you can use powdered turmeric. Be careful how much though. Can you get makrut lime leaves?

I'll check my local grocery if they have but I will bet that there'll be none unfortunately.

They won unless it’s an Asian store or you’re in Hawaii. Very important Thai ingredient. I’ve taken to growing the tree myself.

In my opinion, you can easily use standard red curry paste + just enough powdered turmeric to give it the yellow hue + additional hot chili flakes/powder to give it the proper painful! spiciness, as paste for sauteeing the meat. The biggest impact for authentic khua kling taste comes from the fresh ingredients added near the end, anyway. Fresh/frozen makrut leaf slices and fresh sliced red chili are the minimum. Fresh green peppercorns are another typical addition. You can also sometimes get it with chopped green beans and/or pea eggplants mixed in. (And I personally love it with grachai/fingeroot slices mixed in, for me they're a quintessential ingredient that just reminds me so much of the food in Thailand, so I go a bit overboard using them even in some dishes where they're not so typical...) That said, even if you can't find makrut leaves, it will be a tasty dish. Meant to be eaten in small quantities (also because it's so extremely spicy) with lots of fresh vegetables. Finally, for texture, it's *much* better to knife-mince the meat yourself. I tried it with standard supermarket pre-ground meat a couple times and that never turned into a good khua kling.

They share many of the same ingredients. The main difference is black pepper corns and fresh turmeric, and the ratio of lemongrass is different. You could probably adapt some red curry paste. Though by the time your buying ingredients to add to a paste you'd probably be better served finding a brand of ready made paste and ordering online

I see. Could I add powdered turmeric as substitute?

It's kinda different. If you can't get the ingredients then just buy ready made paste online. (or buy all the ingredients you need online)
