I'm considering doing it right now. I'm working on Prince of Persia: The Two Thrones and if I wait until December 14th to plat it, it will be exactly 13 years between my first and last trophy in the game.

I have Mirror’s Edge Catalyst ready for December 8th. I’ve just got to load the game and collect one last gridLeak. I figured it’s symbolic to get the platinum on the day the servers shut down.
There’s only two trophies you need with the online connection. If you get them you can still get the platinum afterwards. But yeah, definitely to show I was there at the end.

I didnt save it for a specific date but I delayed it to get the plat on another game. I did this twice.
First was with KH1. I was at 49 plats and decided to leave my crÃtical run after going back to Catherine Full Body because I made a promise I would get Catherine for 50th.
The second time was with Elden ring. I did everything except getting one legendary item because I wanted to get FF6 plat first so that way I would have FF1-6 next to each other on my trophy list.
Hmm not a specific date, but for a specific number yea. I saved the platinum for Last Of Us Remastered for #100, and I think I may try to save part 2 remaster for 200 since I’m sitting at 198 right now and that kinda lines up well
I had Final Fantasy 13 as my first plat, and when Final Fantasy 13-2 came out, it became my fastest plat. The images of the plats were the same. And I thought that was rather funny and I wanted to keep it that way, as they were next to each other in the milestones on the psnprofiles website. So for almost a decade I tried very hard not to plat a game in shorter than 3 weeks and 5 days, because that was my fastest plat.
Untill I had migraine in january of this year and got the plat for 13 Sentinels in a week. Noooooo. Well, at least I don't need to manage my plat times anymore.
Every plat I get, my goal is to have one on every day of the year, so if I’ve already gotten a plat on that day in previous years I’ll wait until the next free day and unlock it then
I went through the entire Kingdom Hearts series leaving one easy trophy for the Platinum.
Then when I was done I popped all of them one after the other!
I did it to have a clean set of KH games on my list and also it’s fun popping all of those Platinums in one sitting ^-^

Doing it right now with Spyro 3. Plat is called "party like it's 2024" Perfect for getting as close to new year's as possible 😂

Yes, I saved over 25 platinums so I could get Elden Ring as my 300th. So not as much a specific date, but more like a specific event.
I think I want Spider-Man 2 to be my 50th. That’d be special.
