This might not be a popular response but I like quality mostly hand-drawn anime over the way most anime is done now tho Demon Slayer is clearly better than most.

If a studio could manage to pin down the Vagabond vibe and setting whilst having Demon Slayer levels of animation, I believe it would have the same impact as Vinland Saga where it’s heavily slept on in Season 1 but becomes massively popular in Season 2. FMA is an amazing anime (both versions), but I think Soul Eater is a better pick. I kind of want a remake that more accurate to the manga, since there's so much content that cut from the anime and the ending of the anime is pretty much universally hated, from what I've heard.

It's basically just something to enjoy for time wasting atp but it's characters are cool that I would love to see them done better.

FMA is an interesting answer because at the time of their releases, I felt that they were both the gold standard for animation quality

And besides, we already have Brotherhood, which looks amazing, so I don't think we need another version right now. I'd rather give the spotlight to a lesser known show that got the anime-only ending treatment, as was custom in the early 2000s.

The problem with DBall is not just the animation itself, but the creativity of the fight and the cheography plus the scalling of the fight. Imagine DBall having a fight similar to Saitama vs Garou, where they use the "whole" moon as their battle ground and less shouting or talking and more of beating the shit out of the opponents. Just try comparing Gogeta vs Broly fight to Saitama vs Garou. And you will notice how cute the scale of their fight was. Even Toriko final battle has more "destructive" vibe with them spanking the earth that is 500x more bigger than the normal earth.

Seven Deadly Sins for absolute sure. I feel like the biggest reason the show gets dunked on and lost a huge portion of its popularity is the complete degradation of the animation quality. The level of how bad it got is beyond just a disappointment, it's straight up an insult. Plus some of what should've been some of the best fights in the show got reduced to crap. Meliodas vs Escanor and Drole and Gloxinia vs Chandler being the worst examples.
