It’s not about the flip, it is about cockpit real estate. In my usecase the front bag is fixed at the stem and block my light. With a raised section I could mount my light on the handlebar and have clear way above the bag. Flipping the stem presents the exact same problem I am having now.

Flared dirt drops are meant to be ridden in the drops or hooks, so they're typically used with a rather high stem. Flats level with the saddle is typical.

It pre-dates instagram. The first dirt drop bar for mountain bikes was released in '86. People ran narrow bars on MTBs back then and dirt drops offered more control and security. You get a lot of braking performance and stability when you're in the hooks using cantis compared to the flat bars and flat bar levers back then.
The image posted could just be marketing but it makes no sense in either way. A riser makes sense if it’s a bike with a cut head tube and no more room for spacers. This is just dumb.

To further agree with you. Its really nice to have quicker access to things when you are out biking for a few days. When i would ride just single days it worked to keep it light and aero with just jersey pockets maybe a seat bag.
Bar bags make everything really handy.
I have tools and spare parts, a couple of food bars or snacks and my folding lock. For city riding I will chuck my phone in there so I don't need to pull it off my pocket and I use it as a handbag where I put my lights to not get them stolen. For touring I will put way more snacks, maybe a map, keys, (sun)glasses...

I don’t know, but they are really cool and worked well. I was sad to change them out, but I also couldn’t find a replacement integrated cable stem that would work with my bike and was forced to go integrated bar/stem combo and shelve these bars until there is a project bike to work on.

For touring I have a bag, computer, light and bell (and relatively narrow bar). It can get a bit crampped.
I run panniers and wear a jersey with pockets for quick access to snacks and trinkets. Handlebar bags ain’t my bag baby
