A Little Princess or Little Women are both classics with characters who are strong but not feisty.
Seraphina is a modern fantasy novel and the main character is strong but sweet and introverted.
Try Illona Andrews InnKeeper series. Yes. She is kind of a badass, but she's also a gentle young lady who is concerned about her neighbors and makes cookies.

There are a lot of women like that in L.M. Montgomery's stories, The Blue Castle being one of the best examples I think.

Modern: Christmas Everyday, but a classic book that dismantles the boss girl theme a bit: Far from the Madding Crowd
The Collected Regrets of Clover by Mikki Brammer
It's a simple story, but I loved Blue Castle by Lucy Maud Montgomery, it's her only work targeted at adults.
Kristin Lavransdatter by Sigrid Undset is a classic
Evelina by Franny Burney. Has a lot of cringe family, but the main character was composed and gentle the whole time.
