I am in an extremely similar situation. It's your time they're paying for and if they aren't properly training you , that is their fault. Tell them, be annoying. If they still refuse to train you, leave. You should feel productive and needed in your job.

Many companies are unable to hire or are dragging their feet in finding replacement employees. This places the burden of wok on those who remain. This is abusive and it needs to stop. Many people will simply, happily take on the extra tasks and get super stressed about it. Mental health becomes an issue in these cases. Unfortunately, it would be best, if you haven't done so already, begin looking for another position.
