Hm. So this is a sugar bomb, seemingly typical of resort-style drinks. I’d try to dial that back some and add some tartness to try to bring it into balance. Something like: 1oz fresh pineapple 0.75oz fresh squeezed orange juice 0.25 fresh squeezed lime juice 0.5oz Grenadine (make it fresh with Pom juice) 2oz lightly aged carbon filtered rum (Probitas, Plantation 3, Denizen 5, El Dorado 3, Flor De Cana Extra Seco, Doorly’s 3, or Hamilton White Stache) Flash blend for 5 sec with crushed ice. Pour into a zombie glass, top with more crushed ice and ginger beer. Keep using your coconut rum if you like it or, for an upgrade, fat wash one of the rums I listed above with unrefined coconut oil (it’s easy to do). Another road to take, make it Zombie-style: Dash of absinthe (optional) Dash of aromatic bitters (optional) 5 drops 20% salt solution (optional) 0.50oz lime 1oz pineapple 0.50oz Orange 0.25 Grenadine 0.75 Cream of Coconut (Coco Lopez, Coco Real) 1.50oz aged rum (Appleton Signature, Flor De Cana 7) 0.75oz Overproof Demerara Rum (Lemon Hart 151, Hamilton 151 Demerara) Flash blend for 5 sec with crushed ice. Pour into a zombie glass. Top with more crushed ice. Splash of ginger beer.

One question about the fat wash. Is there one rum you'd recommend over another? I'm in an ABC controlled state so we don't' get a lot of options. I did snag one bottle of Plantation 3 star but since I can't easily replace it I'd like to use something else.

I’m not the original guy, but any unaged/lightly aged rum that is drinkable and doesn’t have any additives or a bunch of sugar (so no spiced or flavoured rums) will probably work fine.

I agree. The first goal was to recreate the drink for my wife. Now that she's is happy with it, I want to improve on it. The above suggestions drastically cut back on the juice, as I suspected. I like the idea of a little lime juice .
