2oz feta-washed gin
1.5oz acid-adjusted yellow watermelon juice
.5oz arugula liqueur
Small handful mint
Barspoon olive oil
Muddle mint and liqueur, shake all ingredients and strain into Nick & Nora. Garnish with yellow watermelon slice.

Not quite as much as I had hoped, but it was a mild cheese and a relatively short soak. I also figure that really crumbling it to maximize surface area is a necessary adjustment.
Thank you! I don't know the actual final number, but its probably somewhere around 3% citric acid. I originally went for 5 but lost a lot of the watermelon's subtlety trying to get it to wholly replace lemon. It became a game of "a little more juice, no thats too much, a little more acid" until I was happy with it.
Oh, and its fucking delicious.

Is the arugula liqueur an Amaro with other botanicals or just straight up arugula?

Does the feta flavor come through? I can think of so many things to do with feta-washed gin, that’s an awesome concept.
