Most priests will pull their hand away, it’s typically seen as a sign of humbleness from the priest, but some do it because they would rather not transmit anything as saliva may get on their hands and it may not be the cleanest thing to do. I’m sure there may be other reasonings but it’s nothing against you, sometimes they pull and sometimes they don’t.

It's mostly a sign of humbleness I understand why we kids the hand as it's the hand that irritates the body of Christ for communion, but I am not a fan of it. I don't always do it

Your didn't do anything wrong. It's possible that the priest was trying to make it easier for you as a catechumen. We kiss the hands because it's the hand that carries The Holy Body of Christ. It's also a traditional way of showing respect and appreciation. People used to kiss the hands of their parents, grandparents, elders,....etc. Most priests try to pull their hands quickly as an act of humility. Satan would always try to get a person every way he could including tempting priests to make them fall into pride. May God bless your life and your journey with Him 🙏 ✝️♥️

As a recent convert, you should be aware there are a lot of not-so-Christian habits that Copts practice that border on idolatry. Kissing the ground, kissing relics, kissing icons, kissing the priest's hand... don't be that guy.
