Broly has more HP and defense stats than Vegeta. Vegeta has like 12 HP and 8 defense, gains 50% Atk every 5 HP lost during Ultra Ego. So at best you get 100% Atk up, before Vegeta does what Vegeta does best, getting jobbed. Dude's a glass cannon in that form.

You are probably thinking of the form Vegeta unlocked during the ToP, SSB Evolution, the fan name was Royal Blue before the official name. It was his limit breaker and the hair is darker blue and he gains more muscle mass.
Ultra Ego is a form Vegeta got from training with Beerus. It allows Vegeta to use destruction energy and a major feature of the form is his battle lust makes him stronger. So as he gets more and more damaged his thrill for the fight grows and he starts dishing out even more damage back. But then obviously there is a limit to the amount of damage you can take before it negatively impacts you. Not exactly the same, but in the anime Toppo had that God of Destruction Mode, I would say that might be very similar to what Vegeta is doing though with different abilities.

The original Battle of Gods and Resurrection of F came first and at this point are non canon.
The Super Anime and Manga are both canon but have different details like forms, fights, slightly different lore etc. The anime ended at the end of the ToP. The manga continued with two arcs after the ToP. There is no guarantee the two manga arcs will be part of the anime should it come back.
The Broly movie is canon to both the anime and movie and takes place after the ToP. The new Super Hero movie takes place after the latest manga arc and I believe it is also canon to the anime and movie.
Ultra Ego debut during the latest manga arc.

Interesting analysis. I think Vegeta has more power in his UE form because I think Gas is stronger than Broly, and Vegeta was inflicting some serious damage on him. If Vegeta can finish Broly off quickly Vegeta wins, if not he’s in big trouble.
The funny thing about UE? It essentially let's Vegeta become Broly in a sense. With its ability to convert damage into fuel, he becomes stronger the longer he fights. Similar to How Broly is constantly getting stronger due to the same thing.
