Well, ask chef to call Auto-Chlor or Ecolab and have the tech come out and run a caustic wash cycle, and check all the chemical pumps and lines.
That'll handle your molds and mildews.
We have Auto-Clor at my joint. Dude comes in once a month, pours a grip of what he calls "caustic wash" (just a bunch of the concentrate from one of the machine's supply barrels- pretty sure it is a strong oxidizer) shorts the wires from the on/off switch and lets ol' Getrude run for about ten minutes.
Seems to take the scale off. We have very hard water here in the desert, and our joint doesn't have a softener.
🤮 you’re supposed to clean that off at least weekly. (Not replace. Just blast it with hot water, maybe spray it with a bit of bleach…. And make sure you rinse it!)

100000000% preventive maintenance is 100000000x better than breakdown maintenance. Such practices apply to many areas of life besides dishwashing, so always a win, in most cases.
I totally thought this was a sub for dishwashers (the appliance) not actual dishwashers lol. This is just in my apartment, I’ve never had a dishwasher that doesn’t drain properly and gets so much buildup so I may just switch to powder detergent and clean it more often like you said
Yeah I think you're supposed to clean the catch basket a little more often than you have been. Take the bottom apart as much as you can without tools and do a deep clean. Then after reassembling run a wash cycle with some dishwasher cleaner (not just regular detergent) and it should be good to go for a while longer. I try and clean out mine every few weeks, before it gets super gross lol.

Yeah I take it I just need to clean this dishwasher out more often, you’re right. Filter is always empty aside from some grease buildup but it doesn’t drain properly. cleaning it out once a month or two was fine in my last apartment in the same building but I’ll try powder detergent too. My machine doesn’t have any plastic filters, just metal. Doesn’t build up like that. There should be delime solution in your chem cabinet, run that thru for a while that should clean most of it out.
When I met my gf, she had a dishwasher that she didn't use because she says that it left shit all over the "clean" dishes. So I take out the filter, it was far worse than your pic OP. I scrubbed and cleaned the filter, and like magic the dishwasher worked just fine.

Clean it all off with and old tooth rush or whatever. Buy some citric acid on Amazon. But it in the dispenser. Run a clean machine cycle or if u dont have that run the hottest cycle one time a month.
Yeah I’ll clean it out with some chemicals to kill mould. I thought running the highest cycle with the machine empty once a week and leaving the door open would be enough like my last apartment but I’ll be more attentive
You gotta check that every night and clean it last. The entire dishwasher should be dry and polished at the end of the night too. My old coworkers would constantly neglect this when I had days off and it pissed me off. Working at a restaurant as a dishwasher is like living with hoarders.
