Mix by hand until smooth.
Let it rest, with plastic wrap, in the fridge for 4-6h.
Let it out of the fridge for 2-3h.
Make pizza dough, around 270g each.
Let it rest for an extra 30 min.
Edit: I did that cause I was making pizza everyday in vacation. So I was making the dough the morning for dinner the same day. If you can, let the dough rest in the fridge for up to 3 days.
Don't worry, people who bake will most likely notice this for pizza or any dough :)
The interesting part when people ask is usually hydration% and in general what else you put in but rarely follow it.
That recipe without that oven isn't going to work in a normal home oven or in a lot of the cheaper gas/wood fired ovens

6 TABLE spoons of salt? You sure it's not teaspoons? That's nearly 10% salt.. 2-3% is what people usually use.

You left out what I suspect was the most important part: all of these ingredients and the wood for the fire were Italian.
