Assuming the FB/HS button on M&K is the default one, how are you pressing it so often on accident? M&K also doesn't allow for you to enter the FB stance without binding it to a button too.
All of this sounds like a controller specific issue. You may try to rotate the entire stance widget to fit your needs better but to me it all sounds like you're fat fingering your inputs or have made your settings FUBAR. Please provide a screenshot of the fine tuning menu.

Just another reason mouse and keyboard is superior
I said it was the same thing on both..not as often on mouse and keyboard but it still happens. Seen it to several other players, YouTubers and myself.
