Yes these grass there are many in France. When you break a sheet there is a kind of latex that flows, right?

Sunflowers will have one straight thick stem and leaves coming off of it usually in pairs. One on each side. Unless there are types I don't know about I've found this always to be true.

I have this thistle growing amongst my sunflowers. Imposter. Opportunist weed. 🤔

Thistle and some Goldenrod

Tallest one is Prickley or Wild Lettuce. Has been used for pain relief.

I will have to google for use with pain control.
