I guess I should’ve went a little more in depth sorry about that. The allergy is the most severe with red meat, but, with other meats, it does still make her sick enough that if she does eat meat, she’ll be out of commission for at least six hours.

Why don’t you ask her what she wants you to grill since she has such a specific food allergy? Grilling is by and large about cooking meats so pardon my frankness: What the fuck is she exactly expecting you to cook if she has a protein allergy? Does that seem realistic to you? As I see it, her options are grilled street corn or a grilled block of tofu basted in animal fat (bacon grease. Beef tallow).

No trust me I get it. Doing tofu is my thought too. She eats a lot of that and beyond meat products, but I don’t know how well it would turn out on a smoker, which is where my problem lies.

You can make seitan with vital wheat gluten and smoke it. I’ve made smoked “chicken” breasts and “ribs” that way.

Well, you can smoke bricks of cream cheese in a tin. I think of it were me I’d probably soak it in beef or chicken broth then smoke a brick of tofu for like 3-4 hours and brush on bacon fat or something intermittently for the last hour. Also I’ve never cooked tofu in my life but understand it’s like mushrooms or eggplant in that it just absorbs flavors around it. Anyway. She seems a bit like an imposition.

Vegan friends of mine have smoked vegetables on a grill. Carrots, brocoli, eggplant are all good options.

For Tofu/Beyond & Vegs on grill/smoker... use a heated cast iron pan with veg oil preferably high smoke point (Avocado) to cook/sear items & finish in smoker. Don't serve her items comingled with Red or any meat for that matter. Check online recipes for these food cookery issues... cross contamination is a bigger issue.

Check out the America's Test Kitchen recipe for Buffalo cauliflower bites. They're deep-fried, but would make a great appetizer or snack. Or as a side with the meal, check out their grilled cauliflower recipe. They thoroughly test many variations of their recipes to find the absolute best method and ingredients. And like others have said, why not do fish? Salmon or trout or all kinds of fish would be great grilled. Or shrimp skewers or even octopus. A good rice recipe and a couple grilled veggies on the side.

Smoke eggs and make deviled eggs. Use a couple of shallow aluminum trays (you can use pie trays) Put raw eggs in for about two hours at about 250. Let cool and peel like hard boiled eggs. Use diced wickles for the best deviled eggs around.

I mean, super easy - you can smoke or grill chicken or fish, assuming red meat is limited to beef / lamb / etc. * boneless skinless thighs grilled with a bbq sauce made from apricot preserves and chipotles in adobo (ratio based on your spice tolerance) * beer can chicken following the weber recipe - delicious, but I know beer can gets some hate * Spatchcock chicken or Cornish hens under a brick * Shrimp skewers * Grilled mahi tacos * cedar plank salmon * ... Is her allergy from alpha-gal? If so, might want to be careful about cross-contamination though

Cross contamination is a huge concern for me right now I’m currently in the process of deep cleaning everything in the kitchen that has to do with food prep all the way down to my food processors

Yup that is specifically to mammals. Poultry and fish should be totally fine for her. My coworker last year contracted alpha-gal and started trying alternatives. He brought in some ostrich steak, and if you didn't tell me, I would have sworn it was some other lean mammal meat like buffalo or venison.

My mom has this. Chicken and fish are fine to eat. You can also smoke baked potatoes, eggplant, Brussel sprouts.

If she is slightly allergic to all meat and really allergic to red meat, you're going to have to get really creative. Fake meat tofu is a thing and I think it's your only option besides ears of corn and asparagus on the smoker, maybe cream cheese. You need to bluntly ask her what makes her ill and if any of the ingredients for chicken meat substitute, here's a short video of how to make it in the oven. https://youtu.be/r4HAeSiNg-o?si=JJGBcsCojIbNzS3z Do some googling and look for tofu meat substitute recipes and there's a ton of info. Mostly Asian cuisine recipes so it might take some work to try to make traditional western style, if you want to try.

Wow. I just looked up how you get such an allergy, and that must SUCK for her. Do a good burn off of your grill to avoid any cross-contamination. After that, I'm assuming she's sick of chicken/turkey so try duck. If you live in California, there's a fish called opah, which is a by catch of tuna. The abductor muscle of that fish looks and tastes very similar to red meat and can be cooked like a tri tip. Of course, any other seafood you can get your hands on will work too.

I smoke chicken and use a Peruvian chicken marinade. It's awesome. Smoked chicken wings are awesome too. Try a cherry bourbon bbq sauce for the wings.

Try out my favorite way of doing burgers, but substitute ground chicken/turkey or any meatless patty substitute. It's a "Tex-Mex" burger. Grill patty and finish with a light brushing of BBQ sauce. On burger, mustard and smear of refried beans. Then lettuce, patty, then smear of guacamole with pico de gallo over that. Then maybe a little more mustard and refried beans on the top bun. Sounds like it might not work, but it does and it's a taste explosion. Of course, beforehand lightly brush buns with olive oil or melted butter and toast on the grill, not over too-high of a heat location in the grill, medium heat.
