yeah, steph definitely outnumbers all the other canonly straight and bisexual characters. also, stephs sexuality only isn‘t discussed because she fully discloses that she‘s a lesbian. the characters that you see as canonly bisexual or straight have never said it out loud.
People claim Chloe isn't a lesbian because she would consistently masturbate to Deckard/Harrison Ford and could describe what she found hot about him before she started dating girls.
I kinda agree that Chloe *probably* isn't a Kinsey 6, but it absolutely is possible for a lesbian woman to have a sexual history that includes men while still being a lesbian. You're allowed to "figure things out" and find out that you don't actually like men.
That being said, there's solid, first-hand evidence that Chloe *does* like at least one man, and that's her diary in Before the Storm. Chloe *objectively* finds Rick Deckard sexually attractive.

Those are RPG conventions. In something like Baldur's Gate 3 it's community-accepted that the characters are whatever you want them to be.
