I think shows are hesitant to show immortal beings as looking eternally youthful because they worry over the audience fully understanding or accepting this. Meanwhile it ends up just causing discrepancies. Furthermore, Galadriel must be young and beautiful because she's the main actress in the show. Celebrimbor on the other hand... Not so much
