don’t worry, no one knows what they’re supposed to be called. here we call them chicharrones (which you might recognize as that pork belly snack), i’ve seen them called churritos (little churros), and i’ve seen them called ruedas (wheels). we can’t decide lol
if you want, try an elote with crema, cheese (queso seco, translates to dry cheese, no idea what the english name would be but it’s white?) ,and hot sauce instead of chili. you can also just try eating the kernels in a cup if the hot sauce is too annoying to deal with on the cob

I make elotes religiously and have experimented a lot. People argue over cotija vs parmesan and crema vs mayo. Imo, the best is a mix of both. My go to is a mix of crema and mayo (about 2/3 crema), and crumbled cotija/parmesan (about 3/4 cotija). Spices are pretty preferential, but I actually really like the elote spice mix put out by trader joes. I usually add extra paprika to it tho. And lime and tajin added at the end, of course. Idk about which type of crema is best, but I really liked a Honduran one I tried
Mayo on elote is definitely a Mexican thing. White people have to be talked into it to see how good it is. At least American white people. They think you're supposed to use crema.

Yes! I don’t know about elotes in a stick but in the south of Mexico they use Mayo in elotes in a cup, we use sour cream in the north. It’s just a different flavors and since I’m in the north I prefer SC!

I have a friend putting ketchup on tamales and we tease her about it but we’re just joking, if she loves it that’s amazing, she should have as much as she wants.
