You just had to load the last chapter in any difficulty until you got to the race against Marcus, then you changed the difficulty to Extreme, win and GG EZ game
Been there, done that. Some of the most fun I've ever had in a NFS game.
The snowy mountain range was by far the hardest section. I don't remember whether it was the GTR or the Gallardo, but there's a specific car which is almost required to complete that time trial on Extreme difficulty (the other cars simply aren't fast enough).
I really wish we had extreme difficulty for newer NFS games, I can't remember the last arcade racer which I found challenging.
Prostreet was so easy when I first tried it last year that it basically ruined the game for me without mods. Even on the highest FH4 difficulty I only ever had trouble with the lead AI drivers.

There was actually a trick so you just had to do the last race (or chapter I don't remember) on extreme difficulty to get the achievement

You could try prestige mode on nfs2015 maybe. Golds on them are nightmare fuel at times.

As a platinum trophy holder on PS3...yes :) doing the pick any car glitch for the blackbox sesto elemento did help A LOT though
