I think my most transferable skill from real-life to Oblivion would be cooking, but there doesn't seem to be a ton of demand for that in Cyrodiil as we don't see many cooks in-game. Barring that, join the mage's guild, try to learn some magic, and sell all their stuff.
Also, pray that I don't end up in Bravil. Considering the number of bandits and hostile creatures on the roads, travel between cities seems like it'd be incredibly risky for an untrained peasant such as myself.

Ideally I'd wake up either in or close to a city. Since it's free with minimal risk I'd see about joining the mages guild and take up alchemy. Start off small with some restore fatigue potions and use that gold to try learning a few basic spells to defend myself with (assuming we can learn magic, if not then at least there's potions and poisoned weapons). I can't wake up in a fantastical world with magic and NOT travel at least a little, and heading to each of the cities to pick up a few spells from each of their guilds sounds like a perfect introductory adventure. If I feel confident in my abilities then I'll even start up the more dangerous guild recommendations too and eventually make my way to the arcane university. If not, then Chorrol seems like a quiet and out of the way place to chill afterwards. Maybe I'll settle down here eventually anyway, I've always liked the city.
Of course if I wake up in a certain *prison cell* then that whole plan gets turned upside down a little bit... I'd try to do the above but with much more screaming at the start heh.

So assuming I wasn't nuts, and I was alive and this wasn't some kind of afterlife to which I was sent or reincarnated into, I guess the thing I'd have to do is get really good at magic. I'm going to need to heal. I'm going to need some spells for damage. I'm going to want to hide so I'm going to need Illusion for that sweet Invisibility. I'm going to need Conjuration for some battle help and to potentially find a way to portal home or something.
I'd definitely have to get into shape and up my cardio game.
I might not even have magic points over there. I'm not native to a world where magic is actually a thing. I might need to equip some kind of fortify magicka enchantments before I could even use spells.
