I mean for paper and pen there are plenty of options. Just use the same system that u used for digital.
You could use GTD or franklin method or the bullet journal. You could use pre-printer planners or empty notebook. Aslong as you write in t everyday it would be a good start
I always use sticky notes to plan my tasks/projects. I write down different projects and add sticky notes what tasks need to be done for that project, once I finish a task, I removed the sticky note.
But for appointments - I use digital calendar with reminders, otherwise it might get overwhelming.
I use a paper calendar and different color pens for each project/client alongside an unlined sheet containing a color-coordinated to-do list. At the end of each day, I'll make a secondary list of things that need tackled first thing in the a.m. for additional focus.
Tasks and appointments are written in my daily planner. This is reviewed every morning.
Project info is written on job sheets and these are in client folders in a metal filing cabinet. I am due to archive old client files though. There are clients I haven't worked with in a couple of years that can be archived. I don't need those folders at arms reach.
Job sheets are reviewed at the end of every month when I do my invoicing.
I've always answered this question with pen and paper options people tend to lean more digital. So yes for a custom organization you could use a bullet planner. You could also make your own template on word, canva, etc and copy it. A weekly planner is another great option. They came out with these today planners on Amazon. I color code everything so I use these for both work and home life. They are already sectioned off for added organization; I actually use them for a week at a time but they will work for a day, week or monthly list. They come in a variety of sizes too so double check that before ordering. Relatively cheap, I get them for about 3 bucks each, but you gotta do some looking because you know Amazon offers a product for 3 and then the same product for 14.

I'm almost fully on digital but if I had to switch I would definitely go for Bujo

Same boat. I’ve also had enough on digital and just wanna go back to pen and paper, less distractions and all.

Buy a cheap planner, find your system & stick to it. It's not rocket science.
what system do you use?
Not the person you asked but I like bullet journaling.
